Huka Falls is the most popular natural attraction in New Zealand, just north of Taupo itself, or the Spa Park car park, and is a leisurely, riverside amble which then takes you off into the forest and along the cliffs. You'll know when you're close to the Huka Falls - you'll hear them roaring!
The Aratiatia Rapids Walk is a longer, four hour walk, following the Waikato River, then up to the cliffs, and down to the Aratiatia Dam, rapids and nature reserve (where you can stop at one of the picnic tables for a bite to eat). The rapids themselves are just as impressive as Huka Falls, if you catch them at the right time.
